Our aim was to present a fruit, usually very acidic, in a pure Juice and make it pleasant to drink.
We had to organise a harvest past the optimal maturity for pickling the fruit on the tree.
The fruit then dehydrated, it lost some acidity and its aromatic concentration increased.
